Pastrami and Swiss Cheese Wrap

Ingredients
 

  • 4 (8-inch) whole wheat tortillas, room temperature
  • ½ cup (125 ml) hummus
  • 1 pkg (150 g) sliced Smoked Beef Pastrami
  • 8 slices Swiss cheese
  • 1 cup baby spinach
  • ½ cup sprouts (e.g. alfalfa, arugula, pea, broccoli)
  • ¼ cup red onion, thinly sliced
  • Black pepper, freshly ground

Preparation

  • Step 1
    Spread 2 tablespoons (30 ml) of hummus onto each tortilla, leaving a ½-inch border free of spread. Place 2 to 3 slices of Smoked Beef Pastrami onto each tortilla, 2 slices of Swiss cheese, ¼ of the baby spinach, ¼ of the sprouts, and ¼ of the thinly sliced red onion. Season with some freshly ground black pepper. Repeat process with the remaining wraps.
  • Step 2
    Roll each wrap up tightly, ending with the seam side down. Secure with a toothpick.
  • Step 3
    Wraps can be cut in half or sliced into rounds.
