- 4 (8-inch) whole wheat tortillas, room temperature
- ½ cup (125 ml) hummus
- 1 pkg (150 g) sliced Smoked Beef Pastrami
- 8 slices Swiss cheese
- 1 cup baby spinach
- ½ cup sprouts (e.g. alfalfa, arugula, pea, broccoli)
- ¼ cup red onion, thinly sliced
- Black pepper, freshly ground
Step 1Spread 2 tablespoons (30 ml) of hummus onto each tortilla, leaving a ½-inch border free of spread. Place 2 to 3 slices of Smoked Beef Pastrami onto each tortilla, 2 slices of Swiss cheese, ¼ of the baby spinach, ¼ of the sprouts, and ¼ of the thinly sliced red onion. Season with some freshly ground black pepper. Repeat process with the remaining wraps.
Step 2Roll each wrap up tightly, ending with the seam side down. Secure with a toothpick.
Step 3Wraps can be cut in half or sliced into rounds.
