Thinly slice the onions and peppers. Heat the smoked meat according to instructions on the package. Turn on two stove elements. Over medium heat, melt the cheese curds in a skillet.

In a second skillet over medium heat, sauté the onions and peppers in oil or butter. Remove from heat and keep warm. Cook the spinach in a little water until wilted. Set aside.

Cut the ciabattas in half and toast them in a skillet or a panini grill with butter.

Start to assemble sandwiches with a slice of bread, a layer of cheese, a layer of onions and peppers, slices of meat, and then spinach.

Last, top your sandwich with a second slice of bread. Flatten with a spatula or grill in a panini press for 2 minutes.
